Smoked Potato GravyKitchen Window's Smoked Mashed Potatoes & Gravy

Ingredients
3 lbs Russet potatoes, peeled and quartered
1⁄4 cup cream
1⁄2 cup butter, melted
2 cups Jack cheese, shredded
2 tablespoon salt, to taste
2 teaspoons Smoked Black Pepper
Grillmaster's Gravy (see recipe below)
Cedar Plank

Method
1. Boil potatoes until tender, drain and run potatoes through a ricer.
2. Add all ingredients to potatoes, and mash. Adjust seasoning.
Refrigerate overnight.
3. Place cedar plank into water, let soak 30 minutes to 1 hour
4. Place the potatoes on a cedar plank and create a depression to
hold the gravy.
5. Preheat the grill on medium heat to approximately 400 degrees.
6. Place Gravy in the indentation.
7. Grill over medium heat until heated through, approximately 20-
30 minutes.

Serves 6

Grillmaster’s Gravy

Ingredients
5 tablespoons butter
1 cup minced onion
1 clove garlic crushed
4 teaspoons all purpose flour
2 cups chicken stock
2 ¾ teaspoons Grillmaster’s Dry Rub
½ teaspoon kosher salt

Method
1. Melt butter in a large sauce pan over medium heat.
2. Add onions and garlic and cook for 5-7 minutes until translucent.
3. Wisk in flour, cook 3-4 minutes, then whisk in stock until smooth. Bring to a boil, cook 2 minutes, then reduce heat to medium-low and simmer 10 minutes.
4. Finish with Grillmaster’s rub, salt and pepper.
