Italian Style Stuffed Portabella
Ingredients
1 t. Olive oil
1 Clove garlic
4 Large portabella mushrooms, stems and gills removed
Salt, to taste
Pepper, to taste
2 Roma tomatoes, sliced thin
12 Basil leaves, fresh
4 oz Part-skim Mozzarella cheese, shredded or sliced thin
1 oz Parmesan cheese (1/4 cup)
Method
1. Turn broiler on high
2. Press one clove of garlic into olive oil.
3. Brush top of portabella cap with olive oil.
4. Place mushroom caps top side down.
5. Season with salt and pepper.
6. Layer on tomatoes, basil and top with cheese
7. Preheat grill pan on high heat
8. Grill mushrooms until softened
9. Transfer grill pan to broiler to melt cheese
Serves 4
