Kitchen Window's Gazpacho with Avocado & Shrimp
Ingredients
2 cups whole wheat bread crumbs
3 cloves garlic
1 cucumber peeled 1/4" dice
2 red peppers, cored, seeded, and rough chopped
1 poblano pepper, roasted, cored, seeded
3 jalapenos, cored, seeded and rough chop
1 med onion, quartered
5 ripe tomatoes, cored
5 cups tomato juice
1/2 cup lime juice, fresh
1/2 cup olive oil
1 Tablespoon cumin
salt & pepper
2 Avocados large diced
12 Shrimp, 16-20 cooked, peeled, devained
Method:
1. Combine bread crumbs, garlic, cucumber, red peppers, jalapenos, onion and tomatoes in a food processor.
2. Pulse until finely chopped.
3. Add remaining ingredients and pulse until desired texture.
4. Adjust seasoning
5. Add gazpacho to bowl, add in 1/4 of the avocado, and garnish with shrimp
Serves 4
